adventures in cooking!

My sweet Jeremy made me Chocolate Mug Cake last night! How sweet is he? My husband is an awesome cook already, but we have both been trying to get creative with our cooking. It's been quite an adventure. (p.s....look how cute these mugs are! They are wild animal mugs we got as a wedding present from the Luke's!) How cute is this little tail?!)

We also tried out this great chicken pasta recipe that I learned from a friend with just a few twists....it turned out great! It was easy too!

I have such a weakness for coffee mugs. I love the zebra head sticking out. cute. I am also curious about what exactly chocolate mug cake is. looks yummy though.

If you want to go Asian for a night this is a great recipe that I love.

Buckwheat noodles (look at the Asian food markets, if regular grocery stores don't have them)
*you can just use spaghetti noodles if you cannot find them anywhere
chicken (2 chicken breasts)
minced ginger
minced garlic
sesame oil
mushrooms (you can use shitake or another kind)
coconut milk
onion (I use a white onion)
seaweed (if you are feeling adventurous)

Two chicken breasts will be enough for this dish. Cut the chicken into bite size pieces and cook in a skillet with 1 Tbl. of minced garlic, one 1 Tbl. or minced ginger, and a 1/4 cup of diced onion. You can add more onion, ginger or garlic if you feel it needs more, it is up to you and your taste buds. Add a cup of sliced mushrooms to the cooked chicken. Let them cook on a lower heat until they cook down a little. Now it is time to cook the buckwheat noodles, or you could do this while the chicken is cooking. The beauty about buckwheat noodles is that they do not take long to cook. Take two fistfuls of noodles. Eyeball the amount of water you will need to cover the noodles in the pot. Boil the water. Once the water boils, turn off the heat, then put the buckwheat noodles in the pot. They should only take around 8 minutes to cook. Test them like a regular noodle to see if they are done. Drain the water from the noodles, and add the noodles to the skillet with the chicken and mushrooms. Make sure the heat is low, so you do not burn the noodles. Drizzle some sesame oil over the top of the noodles and chicken. I love sesame oil, so I tend to put a good amount on it. Next add the seaweed. I buy the dried seaweed chips at the store, it will turn soft and cook down nicely in this dish, but of course, it is optional. Finally, add the coconut milk. You can buy low fat, or a regular type. The low fat kind is not as rich as the regular one. I add enough coconut milk to cover the noodles and chicken. Let it all simmer for a few minutes, or until it is hot enough for you, then serve and enjoy.

I came up with a Homemade Hamburger Helper that comes in handy when we are in a hurry and want some comfort food!

Prepare a box of Velvetta Shells and Cheese.

Seperately, brown a pound of hamburger meat (I season with garlic salt and pepper). Add a can of rotel after browned.

Add the meat mixture to the mac and cheese! It's not anything fancy but one we turn to when in a rush and usually have the ingredients on hand.
